Sassicaia
By Master Chef Gianluca Deiana Abis
1. History
Sassicaia is one of the original Super Tuscans and one of Italy’s most celebrated wines. Produced by Tenuta San Guido in Bolgheri, its story began in the 1940s when Marchese Mario Incisa della Rocchetta sought to create a wine similar in style and quality to the great Bordeaux wines he admired. He planted Cabernet Sauvignon and Cabernet Franc vines on the estate’s stony, gravelly soils—locally known as sassicaia, meaning “place of stones.” At first, Sassicaia was made for private consumption, but after decades of refining viticultural and winemaking techniques, the 1968 vintage was released commercially. It quickly gained international acclaim, setting a new benchmark for Italian wines. In 1994, Sassicaia was granted its own DOC—Bolgheri Sassicaia—the only single-estate DOC in Italy, solidifying its status as a global icon of quality and innovation.
2. Pairing
Sassicaia’s elegance, complexity, and structure make it an excellent partner for refined dishes that highlight rich flavors and textures.
Bistecca alla Fiorentina: The wine’s deep fruit and herbal notes complement the charred crust and juicy, marbled meat of this classic Tuscan steak.
Roast Leg of Lamb with Garlic and Rosemary: Sassicaia’s firm tannins and subtle spice elevate the savory, herb-infused flavors of slow-roasted lamb.
Wild Mushroom Risotto with Truffle Shavings: The wine’s earthy undertones and silky texture harmonize beautifully with the umami of mushrooms and truffles.
Aged Parmigiano Reggiano or Pecorino Toscano: The nutty, salty complexity of these cheeses finds balance in Sassicaia’s ripe fruit and elegant structure.
Duck Breast with Blackberry Reduction: The wine’s dark berry notes and velvety finish pair perfectly with the tender, rich duck and its sweet-tart sauce.
3. The Top Wineries
Tenuta San Guido: As the sole producer of Sassicaia, Tenuta San Guido is a symbol of Italian winemaking excellence. Every vintage showcases the estate’s commitment to precision, innovation, and tradition, making it one of the most sought-after wines in the world.
4. The Notes of Master Chef Gianluca Deiana Abis
Sassicaia is a wine that epitomizes elegance, balance, and a sense of place. For me, it represents the perfect fusion of Italian creativity and Bordeaux-inspired refinement. I appreciate its ability to pair effortlessly with a variety of dishes, enhancing their flavors while revealing new layers of complexity in the wine itself. Sassicaia is not just a wine—it’s an experience, a journey through time and terroir that I savor every time I open a bottle.
